I'm not sure about brick specifically, but cold vs. warm rooms definitly have different sounds. My take on it is that heat normally means more humidity, which makes the air heavier, which kinda deadens the sound. Cold air would be the converse. I'm sure there is a acoustical engineer who could quote physics and chemistry for the reasons, but I just know what I hear!
