I thought that I replied to this once, but I guess not. There needs to be more information about the space. Adding a layer of sheet rock does nothing to improve acoustics inside the space, but could possibly reduce sound transmission to the outside, but only by a dB or so, and only if the walls are done as well.

What is most important is minimizing the parrallel surfaces, and alternating densities of the building materials. Having a narrow room with parrallel brick walls would contribute to flutter echo, and in the case of my last church, cause a chorusing effect, detuning the piano. Having a sheetrock ceiling and a tile floor would not be desirable, but carpet and padded chairs would be better.

We need more info.
