The easiest way for her to understand the Trinity is to consider it from a "non-theological" perspective. You mentioned that she has a daughter. That being so, it should be easy for her to understand the Trinity in more human terms.
She has a daughter so she is like the Father. At the same time she has a mother so she is like the Son. There is an eternal bond of love between a parent and child (the spirit). She is one person, but that person is a Mother, a daughter, and there is an eternal bond that joins them all.
She is a mother and a daughter, she loves her mother and her daughter, but she is one person. Does being a mother and a daughter make her two people? Obviously the answer is no.
So it is with God. God is eternal, and He has always existed as a Father, a Son and the Holy Spirit of love that joins them.
Jesus can not be a created being as the JW's believe and teach. If he was a created being, then there must have been a time when He (Jesus) did not exist. That is in direct contradiction to what scripture teaches. There are a host of other JW beliefs that contradict scripture, but I won't go into that again. That topic has been beaten to death at this site.
I hope this helps you. It may be difficult for you to overcome the lies and twisted scripture of the JW's, but I encourage you to try, for her sake. I strongly urge you to pray without ceasing for her. You may be able to change her mind, only God can change her heart. If her heart is hardened to the truth, and she remains a JW, you can be friends, but that's about it. the Bible warns against being yoked with an unbeliever, and for good reason. You will have irreconcilable differences.
May the Lord give you the words you need to reach her.
